This Due Cigni Hakucho deba knife is the Japanese version of the carving knife. Designed to fillet fish (bones and vertebrae) and shellfish. In order to withstand breaking the blade is a little thicker than that of a carving knife, but still this knife is not meant to be used to chop ingredients or to cut through meat with bones.
