The Robert Herder mill knife is the most popular peeling knife there is. The blade is made of very thin ground carbon steel. This makes the knife very sharp and cuts very fine. However, this carbon steel is not stainless and needs some attention. It needs to be cleaned immediately after use. Perhaps even more important is the direct drying of the knife. The knife is absolutely not dishwasher safe!
